    ingredients:
    
          2 c  Flour
        2/3 c  Sugar
        1/2 ts Salt
          1 tb Baking powder
        1/2 c  Cold butter or marg
        1/2 c  Currants
          2    Eggs beaten
          1 ts Vanilla
    
    directions:
    Preheat griddle or electric fry pan to 325F. Sift the first 4 ingredients into a bowl. Cut in the butter until it is like coarse meal. Stir in the currants, eggs, and vanilla. Work dough together into a ball. Roll out on a floured board to 1/4 inch thick. Cut into 2 inch circles. Place on the ungreased preheated griddle and cook 4-5 minutes on each side until golden brown. Serve warm with butter and preserves. Makes about 18-20 Can be made ahead and frozen until needed. Makes a nice change served with a veggie plate as an appetizer.
