Mediterranean dishes; Prevention 's book is a serviceable collection of simple low-fat recipes that will appeal to readers of the magazine and other busy health-conscious cooks. Casale's book, on the other hand, bears out the healthful promises of this
regional cusine. Her low-fat, low-cholesterol, and low-sodium Italian dishes include both traditional favorites and more modern creations; yet many have, in fact, required very little "updating," or modifying, to make them fit her criteria. Casale, a
food writer and cooking teacher, is also the author of Italian Family Cooking ( LJ 11/15/84) and The Long Life Cookbook ( LJ 2/15/88), one of the better low-cholesterol cookbooks. Her "lean Italian" recipes have proved extremely popular in her cooking
